Keeping fried apps crisp at 1,300 covers

How are you holding fried apps past the 3–4 minute mark without wrecking texture when you’re pushing 1,300 covers? Last night we ran 6–10pm with two fryers, an Alto-Shaam holding cabinet, and lamps around 160F, but calamari and truffle fries fell off fast; I’m open to batter tweaks or expo timing changes that keep speed without sacrificing crunch…

Keep fried apps out of the Shaam and hold on wire racks over perforated pans under lamps bumped to about 185°F with a small fan — “steam is the silent crunch killer.” If you must use the Shaam, run it dry; for calamari, a 50/50 rice flour–cornstarch dredge stays crisp longer. Are you running any humidity in there?
